Considered by many as the king of all steaks; our beef fillets have been matured for 28 days and are renowned for their mouth watering taste and unbelievable tenderness. Our fillet steaks are sourced from Scotland's finest free-roaming, British cattle herds. They have been cut from the centre fillet (loin) - the least used muscle of the animal. The fillet is the leanest cut of beef with approximately 150 calories per 100g (3.5oz) and a low fat content.

Storage and handling

Fridge: Place it in the fridge as soon as you receive your delivery. Place it in the coldest part of the fridge.

Freezer: Freeze as soon as you get your delivery. Defrost completely before cooking. It can be kept for up to four months.

Cooks tips

The fillet needs very little cooking. It is best cooked in a heavy ribbed pan or griddle, on a high heat. Our butchers tip - Season with a little salt and pepper to taste AFTER cooking to avoid drawing out the natural flavours of the steak during the cooking process. This can cause toughness in the meat. Fillet steak is best served rare to medium rare.
