Scottish beef, British cattle breeds, hung for 28 days approx.  3kg (6.lb 9oz) and 4kg (8lb 13oz).

Our prime cut beef salt brisket (known as corned beef brisket in the US) is from some of the finest British breeds fed on grass and corn. Bred on our selective farms in Scotland and offering exceptional value for money. Salt brisket is traditionally soaked in brine for 6-8 days in summer; 8-10 days in winter and is then rinsed in water to remove the salt ready for cooking. Once cooked the beef is extremely tender, full of texture and has a unique taste.

Storage and handling

Fridge: Place it in the fridge as soon as you receive your delivery. Place in the coldest part of the fridge.

Freezer: Freeze as soon as you get your delivery. Defrost completely before cooking. It can be kept for up to four months. 

Cooks tips

Salt brisket is best when cooked slowly. Place it in a large covered pot of water, bring to the boil and simmer for 3-5 hours until tender. Beef salt brisket can be cut into large tasty chunks and served with crusty granary bread with horseradish sauce, mustard or sauerkraut for a fantastic meal. Salt beef can also be served in the traditional Jewish way, between thick slices of rye bread (the Reuben sandwich) or bagels, accompanied by a selection of pickles such as beetroot, onions and gherkins.
