The leg of mutton cut is lean and has a fine texture. It is so named because of the shape of the muscle where it is located on the beef cattle. It is cut from inside the shoulder and fore-quarter of prime British breeds of cattle, that have been sourced from one of the best beef breeding regions of the world, Scotland.

Although it can be fried, to ensure optimum tenderness and flavour, it is best when slow cooked.

Storage and handling:

Fridge: Place it in the fridge as soon as you receive your delivery. Place in the coldest part.

Freezer: Freeze as soon as you get your delivery. Defrost completely before cooking. It can be kept for up to four months.

Cooks tips

Our leg of mutton beef makes the perfect Sunday roast. However, it can be pot roasted on a hob as an alternative to roasting.
