Storage and handling

Fridge: Store venison in the coolest part of the fridge, and use within 2 days.

Freezer: Freeze within 2 days and ensure that the wrapping is airtight. Consume within 3 months, defrosting either at room temperature or in the fridge overnight.

Cooks tips

Venison Saddle fillets are perfect for roasting, or gently pan fried or wrapped in pastry with wild mushrooms and oven cooked as a Venison Wellington. Try them pan fried in red wine or brandy with shallots, then flambéed and served red to medium rare with pears. Our saddle fillets are great when pan fried as a tasty Stroganoff with wild mushrooms, shallots in brandy and cream then served with wild rice topped with fresh coriander. All very tasty.
