Roasted Duck with Fresh Mango Salsa Recipe


For the duck
• 1 duck breast, the skin scored in a criss-cross pattern
• Salt and freshly ground black pepper

For the mango salsa
• ¼ mango, chopped
• 1 tsp fresh root ginger, grated
• ¼ red pepper, chopped
• 2 tbsp honey
• 1 lime, zest and juice
• 3 tbsp fresh coriander, chopped

How to prepare

1.    Preheat the oven to 180C/350F/Gas 4.

2.    Season the duck breast with salt and freshly ground black pepper.

3.    Heat an ovenproof frying pan over a medium heat and, once it is hot, add the duck breast, frying it for about 4 to5 minutes, skin-side down, until the fat melts.

4.    Turn the duck breast and fry it on the other side for a further 2 to 3 minutes.

5.    Transfer the duck to the oven and continue to cook it for another 4 to 5 minutes.

6.    Remove it from the oven and set it aside on a warm plate to rest for about 6 to 7 minutes.

7.    To prepare the salsa, mix together all of the salsa ingredients in a bowl until they are well combined.

8.    To serve, carve the duck breast into slices, placing these into the middle of a serving plate, before spooning the mango salsa over the duck.
