Sticky Barbeque Sauce Recipe

An ideal combination to accompany spare ribs and steaks, sticky barbeque sauce is simple to make despite the number of ingredients required.

There are many regional variations of barbeque sauce that rely on different ingredients.

Two quite different recipes are listed here for your enjoyment. Both are quite simple to make.

Combine 2 tablespoons of clear runny honey, 1 crushed garlic clove, 1½ teaspoons five spice, 2 tablespoons soy sauce, 3 tablespoons orange marmalade, ½ teaspoon of grated orange zest, 1 tablespoon of sesame oil and a piece of ginger approx 3cm long finely grated in a saucepan and simmer on a low heat while stirring.

When all the ingredients have blended together use either as a marinade for your meat or pour over the cooked ribs or steaks.

The second one is derived from the Southern states of America.

Combine 2 cups of tomato ketchup, 1 cup of dark molasses, 1 teaspoon chilli powder, 1 teaspoon onion powder, 1 teaspoon paprika, ½ teaspoon ground all spice, ½ teaspoon cinnamon, ½ teaspoon mace, ½ teaspoon of freshly ground black pepper in a saucepan and simmer over a low heat while stirring.

Once the molasses has fully dissolved the sauce should be ready to serve.
