Stuffed Chicken Breast Recipe

Ingredients

• 1 chicken breast
• 3½oz/100g quick-cook polenta
• 10½fl oz/300ml hot chicken stock
• 1¾oz/50g gorgonzola
• 1 tbsp butter
• 1 tbsp olive oil

How to prepare

1.    Cut a single slit lengthways into the chicken breast.

2.    Then, to make the stuffing, put the polenta into a mixing bowl and quickly whisk in the hot chicken stock, before stirring in the butter and the gorgonzola .

3.    Stuff the chicken breast with this mixture, by pushing the stuffing into the slit you made.

4.    Heat the olive oil in a frying pan and then fry the chicken breast, skin-side down, for about 5 to 7 minutes or until it is crisp and golden.

5.    Turn the chicken over and then cook the other side for a further five minutes, or until you feel it is cooked through.
