Wild Boar Steaks With Fennel Recipe

Pre-heat your oven to 180°C/gas 4; cut the fennel into medium size pieces.

Sprinkle with a little olive oil and season with a little sea salt, pepper, lemon juice and zest and cook on a baking tray for about 20 mins.

Rub the wild boar steaks with a little oil, season with salt and pepper, sprinkle some fennel seeds and chilli flakes over the steaks and cook in a hot pan that has been pre-heated without oil.

Cook the steaks on a medium heat for about 4 mins each side.

Remove from heat, cover with foil and rest for 10 mins.

Serve with fresh vegetables of choice.
